Black Salsify or Scorzonera

Black Salsify or Scorzonera is a perennial plant with large black roots. It has has heads of yellow ray flowers with roots that can reach 3' long! The root has a slight sweet taste with nutty overtones. It is native to Southern Europe and the Near East. The scorzonera sweet is a crystallized dessert made from scorzonera. The thick black skin of the salsify root is usually considered inedible and can be removed either prior to or after boiling.
